When we say handcrafted, we mean it! All of our sausages, smoked meats and charcuterie are made right here in the shop in our climate-controlled sausage kitchen using original recipes written by Kevin and Dr. Roger Mandigo. Pictured is Kevin pulling Hickory Smoked Bacon and Beef Bacon out of the Smokehouse. Our microprocessor-controlled smokehouse allows us to precisely control our processes and continually work to improve our products with every batch!
